Boning Knife

The boning knife is a traditional tannery tool designed for the careful preparation and finishing of hides and skins. Despite its name, this pattern was developed for use in the leather trade, where precision and control are essential during the tanning process.

 

Used to remove stubborn pieces of flesh and connective tissue, trim hides to shape, and carry out detailed cleaning work that larger fleshing knives cannot easily reach, the boning knife is an indispensable tool for both professional tanners and small-scale hide processors. Its narrow blade allows for accurate work around irregular edges and finer areas of the skin while minimising the risk of damaging the hide.

 

Handcrafted in Sheffield by George Barnsley and Sons, this traditional pattern reflects generations of toolmaking experience and the city's long association with the leather industry. The comfortable handle and finely ground blade are designed to provide excellent control during prolonged use.

  • Easy to sharpen compared with many modern stainless steels.
  • High hardness after heat treatment.
  • Fine grain structure, allowing a keen cutting edge.
